Choc-Double Chocolate Muffins


  • 125 g butter
  • 90g chocolate (unsweetened)
  • 1 cup sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 1 teaspoon salt
  • 2 cups flour
  • 1 cup buttermilk
  • 1 teaspoon bicarb soda
  • 1 cup chocolate chips


  1. Preheat the oven to 200°C. In a large bowl, combine butter and chocolate. Heat in microwave oven on High for 2-2½ minutes, until melted and smooth when stirred. Let it cool to lukewarm.

  2. Stir in sugar, egg, vinilla, salt and buttermilk, until thoroughly blended. Mix together flour and baking soda and stir into chocolate mixture just until combined. Stir in chocolate chips.

  3. Spoon batter into 12 paper-lined muffin cups.

  4. Bake 15-20 minutes, or until a cake tester inserted into the centre comes out clean. Let the muffins cool for 5 minutes, then transfer to racks to cool completely. Serve warm or cool.
